Braised chicken wings with mushrooms and potatoes
454 g (1 lb) chicken wings, 10 g dried shitaake mushrooms (reconstituted), 300 g (10.5 oz) potatoes, 3 slices ginger, 2 red shallots (sliced), 2 tsps minced garlic, 1 spring onion (chopped)
1-1/2tbsps Amoy First Extract Reduced Salt Soy Sauce with Black Bean, 1/4 tsp sugar, pinch of ground pepper, 1 tbsps cornflour
2 tbsps Amoy First Extract Reduced Salt Soy Sauce with Black Bean, 1 tbsp Amoy Reduced Salt Oyster Sauce, 1 cup water
1.Rinse the chicken wings and make a slit lengthways between the two bones. Add the marinade ingredients and stir well.
2.Peel the potatoes and cut into thick chunks.
3.Fry the chicken wings until golden brown on each side, and then remove from the pan. Fry the ginger, shallots, and garlic until fragrant, and then add the mushrooms and potatoes and fry for a couple of minutes. Add the sauce ingredients and chicken wings and simmer over a low to medium heat for 10 minutes or until the potatoes are cooked. Add the chopped spring onion and cook until the sauce thickens slightly. Serve immediately
Close the lid tightly and keep refrigerated
