Lo Sui Pig's Tongue, Beef Shin and Chicken Wings
Beef shin 300g, frozen pig tongue 300g, middle joint chicken wings 6pcs, Amoy Pure Sesame Oil 2 tsp
Amoy Lo Sui Marinade 450ml, water 4 cup
1. Cook beef shin and pig tongue in boiling water for 15 mins. Rinse beef shin and drain well. Scrape off the residues on the pig's tongue when it is still hot. Rinse and set aside.
2. Boil the seasoning. Put beef shin and pig tongue in the Lo Sui marinade and bring to a boil. Turn to low heat and cook for 75 mins until you can stick a chop stick into it. Take out beef shin and pig tongue. Refrigerate beef shin and slice it when it is cool. Leave pig tongue to cool and then slice into pieces.
3. Re-boil the Lo Sui marinade. Add in chicken wings and bring to a boil. Turn to low heat and cook for 10 mins. Transfer chicken wings, sliced beef shins and pig tongues to plate. Pour Lo Sui marinade and sesame oil on top.
*1 Cup = 250ml
Close the lid tightly and keep refrigerated
