Braised Spare Ribs with Sweetened Vinegar
Spare ribs 300g, Amoy Sweetened Vinegar 250ml, oil 1/2tbsp, Sliced Ginger 1pc, 2 shallots, Salt 1 tsp
1. Clean and blanch spare ribs. Drain well.
2. Heat the pan with oil, sauté gingers and shallots. Transfer gingers and shallots to a casserole.
3. Pour sweetened vinegar into the casserole and bring it to a boil. Put in spare ribs and salt then bring it to a boil. Turn to low heat and cook for 30 minutes. Turn off the heat and cover the lid. Let it sit for an hour. Then braise further for 15 minutes.
Close the lid tightly and keep refrigerated
